BodyBread and people.For a sourdough society. What we do. Freedom Bakery is a social enterprise proudly based in Glasgow, Scotland. Our mission is simple: to make great bread — and to help people. From sourdoughs to Struan loaves to French butter croissants, we make everything by hand. All our doughs are proved for at least 20 hours and delivered straight out of the oven. We’re up early to bake (lucky our head baker Scott likes 4am starts), but through the day we also offer education and training to people whose lives have taken a rough turn. Liaising closely with the Scottish prison service, we form relationships with prisoners on day release – and we offer employment opportunities when their sentences end. Why do we do this? Because we know work builds confidence. It makes a difference. The better Freedom Bakery performs, the more we can do to help. A lot of them are vegan. Add to that, a new wave of cafes offering buns, brioche, brownies and other sweet treats. BUY THE BOOK: GLASGOW’S 100 BEST RESTAURANTS Here’s new arrivals you should know about, and some of our local favourites.  Honeytrap is a new vegan bakery that’s opened at 80 Victoria Road. Ask for their rhubarb almond crumble. Akara on Duke Street sell impressive peanut butter dulce de leche brownies. Sweet Jane Bakehouse, from the team that brought you Mesa and Cafe Strange Brew, opens in Dennistoun later this month. Rawnchy is on Bellgrove Street.  Sugar Fall have eye-catching cakes on Byres Road. Also in the West End, Cake Bar and Broken Clock Cafe. Recently, Root Candy exchanged collapsible tables at Partick Farmers Market for a new home on Hyndland Street – check out their vegan cookies.  The Bakery by Zique have shelves stocked with freshly baked bread. We enjoy Tantrum Doughnuts. There’s a new tearoom on Pollokshaws Road, The Sweet Tart. For souffle pancakes, Koko House is the place. Sustainable bakery and deli, Zilch, has opened on Eglinton Street.  Big Bear Bakery for your Sunday croissants. The cake stand at The Hidden Lane Tearoom is always eye-catching. Then, there’s Cottonrake Bakery and Seb & Mili and Singl-End. The sourdough bread from Freedom Bakery is part of the menu in some of Scotland’s top restaurants. BodyCity BakeriesOct 30194City Bakeries, Pollokshaws Road (Glasgow Museums) Historically, at this time of year, if mum was feeling flush, she would dash off to the City Bakeries, to secure a one of their famed Hallowe’en cakes.Decorated with a grotesque face, with rosy cheeks filled with sweet mallow (he/she had a coupon like a City Bakeries' Hallowe’en cake!), the sweet treat would be packed full of bizarre, and arcane, trinkets; a bachelor’s button; a small piece of rag; a little bell; a silver coin; and a spinster's thimble.Hide all those gubbins in a cake today and you’d be sued for trying to poison or choke the lieges!Even though the City Bakeries – this one was in Pollokshaws Road, Shawlands - are now just a fond memory (they did a rare roll and mince!), Tunnock’s still carry on the tradition of baking the seasonal treat.Mind you, you’re not allowed a slice until you’ve learned, and memorised, your guising turn.It was difficult to eat a slice of cake with fingers and knuckles covered in blisters, cuts and gouges from hollowing out a tumshie!Want to know whenever we add something? The bakery was opened by Ian Gregg OBE (right) and Alan Greenshields, general manager of Greggs of Scotland (left). The new bakery is situated in Clydesmill Investment Park. Greggs is the UK’s largest bakery retail company, with a chain of more than 1,400 Greggs and Bakers Oven retail outlets selling an extensive range of baked goods including pies, pasties, doughnuts, cakes, bread, rolls and scones. The company first started in Newcastle and has a large base in the North East and Scotland, with 149 Scottish stores. In June 2006, as part of an expansion and update of facilities, Greggs decided to relocate the company’s main Scottish bakery from the Rutherglen bakery in Glasgow to a new purpose-built site 2.5 miles away on the Clydesmill Investment Park. Plots 2, 4 and 5 of the Clydesmill Investment Park, Westburn Drive, Cambuslang were sold to Greggs for £730,000 in May 2005. South Lanarkshire Council granted planning permission for the new bakery in mid-2006. The 340 staff of the Rutherglen bakery were transferred to the new facility. The expanded bakery also increased production efficiency. The bakery required an investment of £15m and was officially opened on Tuesday 27 November 2007 by Ian Gregg. CONSTRUCTION The construction of the new Greggs production factory began in the second half of 2006. The general contractor for construction was Cleggs Food Projects. The lighting, power, fire alarm and emergency lighting systems were installed by SCS Building Services. “Greggs upgraded its retail shop systems with new EPOS hardware in June 2006.” The Clydesmill factory has also become the first facility to install a commercial fire protection system able to extinguish burning polypropylene bakery trays. The system combines water and foam in a sprinkler unit. This is because burning polypropylene quickly melts and cannot be easily extinguished with just water; that is when the foam component is useful. Insurance on facilities of this kind can be high and this system will lower premiums. The system was supplied by Tyco Fire and Integrated Solutions. The new bakery equipment in the facility was installed by various machine manufacturers: Newsmith (traywash), Spooner (travelling ovens), J.B.S (roll plant), Double D (rack oven), Rademaker (pie machine) and Belshaw (doughnut fryer). The new equipment will allow the production of an extensive range of rolls, sweet bun goods, doughnuts and supply other divisions with pie lines. EXPANSION In 2009, the company confirmed plans to extend its facility at Clydesmill. The expansion of the factory is planned to be completed by 2012. The details of the expansion are yet to be announced. UPGRADE OF RETAIL SYSTEMS Greggs upgraded its retail shop systems with new EPOS hardware from J2 Retail Systems in June 2006. The upgrade has included the installation of 550 integrated touchscreen terminals to an initial 300 stores. A 500-store installation contract was awarded on November 2007. We are a cake DIY centre for cake decorators, hobbyists and those who just fancy a try. We bake and supply sponge cake bases, plain iced cakes and all sorts of cake decorating supplies to the whole of the UK. We also create bespoke celebration wedding cakes, and teach cake decorating here in our Glasgow Cake Centre.
